Hummus

Ingredients:

 

Chickpeas                             1 cup

Tahini paste                         ¼ cup

Lemon, juice                        1 tablespoon

Garlic                                    1 clove

Salt & Pepper                      to taste

 

 

Procedure

  • Boil chickpeas until tender for about 10 minutes  and remove skin.

  • Using a blender, puree chickpeas and tahini paste together until smooth.

  • Add in lemon juice and season.

  • Drizzle with olive oil and serve with pita bread.

 

 

 

 

Melitzanosalata

Ingredients:

 

Eggplant                                  6 pieces

Tomato, fine chopped          2 pieces

Garlic, minced                        1 clove

Fresh parsley, chopped        1 tablespoon

Yoghurt                                   ½ cup

Lemon                                     1 tablespoon

Salt & pepper                         to taste

 

Procedure

  • Grill eggplant and peel off the skin. Roughly chop the eggplant.

  • In a bowl mix all ingredients together until well blended.

  • Season with salt & pepper.

  • Serve with warm pita bread

Htipiti

Ingredients:

 

Green chili                            2 pieces

Feta Cheese                         1 cup

Water                                    1/8 cup

Olive oil                                ½ cup

Lemon                                  1 piece

Salt & pepper                      to taste

 

Procedure

  • In an open flame roast green chili and peel the skin off.

  • Using a blender, puree cheese, lemon juice and roasted chili.

  •  Gradually add olive oil, puree until smooth.

  • Season with salt pepper.

  • Serve with warm pita bread

 

 

 

 

Tzatziki

Ingredients:

 

Cucumber, peeled & seeded             4 pieces

Yoghurt                                                 1 1/2 cup

Garlic, minced                                      2 cloves

Fresh dill, chopped                              1 tablespoon

Salt                                                         to taste

 

 

 

Procedure

  • Using a grater, grate cucumber and squeeze off the juice.

  • In a bowl, mix grated cucumber, yoghurt , garlic and dill until well blended.

  • Season with salt

  • Serve with warm pita bread.
